Italian Zucchini Crescent Pie

Italian Zucchini Crescent Pie

  • 2 tablespoons LAND O LAKES® Butter
  • 4 cups thinly sliced zucchini
  • 1 cup chopped onions
  • 2 tablespoons dried parsley flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried basil leaves
  • 1/4 teaspoon dried oregano leaves
  • 2 Eggland’s Best eggs, well beaten
  • 2 cups shredded Muenster or mozzarella cheese (8 oz)
  • 1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
  • 2 teaspoons yellow mustard
  1. Heat oven to 375°F. In 12-inch skillet, melt butter over medium-high heat. Add zucchini and onions; cook 6 to 8 minutes, stirring occasionally, until tender. Stir in parsley flakes, salt, pepper, garlic powder, basil and oregano.
  2. In large bowl, mix eggs and cheese. Add cooked vegetable mixture; stir gently to mix.
  3. Separate dough into 8 triangles. Place in ungreased 10-inch glass pie plate, 12×8-inch (2-quart) glass baking dish or 11-inch quiche pan; press over bottom and up sides to form crust. Firmly press perforations to seal. Spread crust with mustard. Pour egg mixture evenly into crust-lined pie plate.
  4. Bake 18 to 22 minutes or until knife inserted near center comes out clean. If necessary, cover edge of crust with strips of foil during last 10 minutes of baking to prevent excessive browning. Let stand 10 minutes before serving.

Cheesy Zucchini Boats

  • 4 zucchini, halved lengthwise
  • 3 tablespoons extra-virgin olive oil
  • 1/2 red onion, chopped
  • 5 plum tomatoes, chopped
  • 1 cup bread crumbs
  • 1/2 cup walnuts, toasted and coarsely chopped
  • 1/2 teaspoon dried oregano
  • Salt and pepper
  • 6 ounces shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  1. Preheat the oven to 375°. Using a small spoon, scoop out the zucchini flesh, leaving a 1/4- to 1/2-inch-thick shell. Wrap the zucchini flesh in a paper towel and squeeze out any excess liquid; discard the liquid and set aside the flesh. Place the zucchini shells cut side down on a baking sheet and bake for 15 minutes.
  2. Meanwhile, in a large skillet, heat 2 tablespoons olive oil over high heat. Add the zucchini flesh and onion and cook, stirring, until softened, about 5 minutes. Add the tomatoes and cook until softened, about 5 minutes. Push the vegetables to the side of the pan, add the remaining 1 tablespoon oil and the bread crumbs, and toast the bread crumbs for 2 minutes. Remove from the heat, stir in the nuts and oregano, then combine with the vegetables; season with salt and pepper.
  3. Flip over the zucchini shells and line the bottoms with the mozzarella. Pack in the filling. Sprinkle the parmesan on top. Bake until the zucchini is tender when pierced with a fork, 20 to 25 minutes.

Beef and Beer Chili

  • 1 1/2 cups chopped red onion (about 1 medium)
  • 1 cup chopped red bell pepper (about 1 small)
  • 8 ounces extralean ground beef
  • 2 garlic cloves, minced
  • 1 1/2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1 (19-ounce) can red kidney beans, drained
  • 1 (14.5-ounce) can no-salt-added diced tomatoes, undrained
  • 1 (14-ounce) can low-sodium beef broth
  • 1 (12-ounce) bottle beer (such as Budweiser)
  • 1 tablespoon yellow cornmeal
  • 1 tablespoon fresh lime juice
  1. Combine first 4 ingredients in a large Dutch oven over medium-high heat.
  2. Cook 5 minutes or until beef is browned, stirring to crumble. Stir in chili powder, cumin, sugar, and salt; cook 1 minute.
  3. Add oregano and next 4 ingredients (through beer) to pan; bring to a boil. Reduce heat, and simmer 15 minutes. Stir in cornmeal; cook 5 minutes. Stir in juice.

Spaghetti Sauce

  • 1 cup chopped onion (1 large)
  • 1/2 cup chopped green sweet pepper
  • 1/4 cup chopped celery
  • 2 cloves garlic, minced
  • 1 tablespoon cooking oil
  • 4 cups chopped, peeled tomato (6 large) or two 14.5-ounce cans diced tomatoes, undrained
  • 1 6-ounce can tomato paste
  • 1/3 cup water
  • 2 tablespoons snipped fresh parsley
  • 1 tablespoon snipped fresh basil or 1 teaspoon dried basil, crushed
  • 1 tablespoon snipped fresh oregano or 1 teaspoon dried oregano, crushed
  • 2 teaspoons snipped fresh marjoram or 1/2 teaspoon dried marjoram, crushed
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces dried spaghetti or linguine
  • Finely shredded Parmesan cheese (optional)
  1. In a Dutch oven cook onion, sweet pepper, celery, and garlic in hot oil until vegetables are tender.
  2. Stir in the tomato, tomato paste, water, parsley, dried herbs (if using), sugar, salt, and black pepper. Bring to boiling; reduce heat. Simmer, covered, for 30 minutes. Uncover and simmer for 10 to 15 minutes more or to desired consistency, stirring occasionally. Stir in fresh herbs, if using.
  3. Meanwhile, cook pasta according to package directions. Serve sauce over hot cooked pasta. If desired, sprinkle with Parmesan cheese. Makes 4 to 6 servings.
  4. Spaghetti Sauce with Ground Beef or Sausage: Prepare as above, except omit the oil. In a large saucepan or Dutch oven cook 12 ounces ground beef or pork sausage with the onion, sweet pepper, celery, and garlic until meat is brown. Drain. Continue as directed in Step 2.
  5. Spaghetti Sauce with Meatballs: Prepare sauce as above. Meanwhile, in a large bowl combine 1 egg; 3/4 cup soft bread crumbs (1 slice); 1/4 cup finely chopped onion; 2 tablespoons finely chopped green sweet pepper; 1/4 teaspoon dried oregano, crushed; and 1/4 teaspoon salt. Add 12 ounces ground beef or bulk pork sausage; mix well. Shape into 24 meatballs. Arrange meatballs in a 15x10x1-inch baking pan. Bake in a 350 degrees F oven for 15 to 20 minutes or until done (160 degrees F). Drain. Serve with sauce and hot pasta.
  6. Big-Batch Spaghetti Sauce: Prepare as above, except use a large Dutch oven and 2 cups chopped onion, 1 cup chopped sweet pepper, 1/2 cup chopped celery, 4 cloves garlic, 2 tablespoons cooking oil, 8 cups tomato or two 28-ounce cans diced tomatoes, one 6-ounce can tomato paste, 2/3 cup water, 1/4 cup fresh parsley, 2 tablespoons fresh basil or 2 teaspoons dried basil, 2 tablespoons fresh oregano or 2 teaspoons dried oregano, 1 tablespoon fresh marjoram or 1 teaspoon dried marjoram, 1 teaspoon sugar, 1 teaspoon salt, and 1/2 teaspoon black pepper. Simmer, uncovered, for 30 minutes or until desired consistency. Serve as directed.

To Freeze: Place sauce in freezer containers. Seal and freeze up to 3 months. To use, thaw overnight in the refrigerator. Transfer to saucepan and heat through.

Venison Chili

  • 1/4 cup olive oil
  • 2 large onions, chopped
  • 1 cup chopped celery
  • 3 garlic cloves, minced
  • 3 lb venison burger
  • 1 qt tomatoes
  • 1 3/4 cup beef broth
  • 6 oz tomato paste
  • salt
  • 4 tsp cumin
  • 1 tbsp chili powder
  • 1 tsp cayenne pepper
  • 1/2 tsp oregano
  • 1/2 tsp allspice
  • 2 cans Mexican chili beans
  1. Heat oil. Cook onions, celery, and garlic over medium heat until vegetables are soft. Add burger, breaking meat up with a fork; cook until meat is done throughout.
  2. Add tomatoes and their liquid, beef broth, tomato paste, salt, cumin, chili powder, cayenne pepper, oregano, allspice. Cook over low heat for 1 hour.
  3. Add beans, heat through.

Rigatoni alla Siciliana

  • 1 eggplant, about 1-1/2 pounds
  • 3 cloves garlic, sliced
  • 3 tablespoons olive oil
  • 1 can (28 ounces) fire roasted whole tomatoes
  • 1-1/2 teaspoons dried oregano
  • 1-1/2 teaspoons salt
  • 1/4 teaspoon red pepper flakes
  • 1 pound mini rigatoni pasta
  • 1 cup smoked mozzarella cheese, shredded
  1. Trim eggplant and cut into 1/2-inch pieces. In a large skillet, cook eggplant and garlic in oil for 7 minutes over medium-high heat, stirring occasionally.
  2. Stir in tomatoes and break up with a wooden spoon. Add oregano, salt and red pepper flakes. Simmer for 15 minutes, stirring occasionally.
  3. While sauce is simmering, cook pasta following package directions. Drain and reserve 1 cup of the cooking water.
  4. Toss drained pasta with sauce. Add reserved pasta water, in 1/4 cup increments until desired consistency.
  5. Stir in cheese and allow to melt slightly and serve.

Shrimp, Asparagus, and Penne Pasta

  • 1 cup uncooked penne (tube-shaped pasta)
  • 1 tablespoon olive oil
  • 2 cups (1-inch) sliced asparagus (about 3/4 pound)
  • 1/2 cup chopped onion
  • 1 teaspoon bottled minced garlic
  • 1/2 pound peeled and deveined medium shrimp
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper
  • 1 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano, undrained
  • 1/4 cup (1 ounce) preshredded fresh Parmesan cheese
  1. Cook pasta according to package directions, omitting salt and fat; drain.
  2. While pasta cooks, heat oil in a large skillet over medium-high heat. Add asparagus, onion, garlic, and shrimp; sauté for 5 minutes. Add oregano, pepper, and tomatoes; cook over medium-low heat 5 minutes or until thoroughly heated. Stir in cooked pasta; sprinkle with cheese.

Top Sirloin Kabobs and Avocado Sauce

  • 3 Tbsp. extra virgin olive oil
  • 1 Tbsp. granulated garlic
  • 1 Tbsp. granulated onion
  • 1-1/2 tsp. dried oregano
  • 1 tsp. freshly ground black pepper
  • 1/2 tsp. kosher salt or salt
  • 3 lb. beef top sirloin steak, about 1-inch thick
  • 1 medium ripe avocado, seeded, peeled and coarsely chopped
  • 1/2 cup seedless (English) cucumber, coarsely chopped
  • 1/3 cup lightly packed fresh mint leaves
  • 1/4 cup dairy sour cream
  • 2 Tbsp. lime juice
  • 1 tsp. kosher salt or salt
  • 1 tsp. ground cumin
  • Fresh mint leaves (optional)
  1. In large bowl combine oil, granulated garlic and onion, oregano, pepper, and the 1/2 teaspoon salt; set aside. Trim fat from meat. Cut meat in 1-inch cubes. Add meat to oil mixture; toss to coat evenly. Let stand at room temperature for 30 minutes.
  2. Meanwhile, for Avocado Sauce, in food processor combine avocado, cucumber, mint, sour cream, lime juice, 1 tablespoon water, the 1 teaspoon salt, and cumin. Cover and process until nearly smooth, stopping to scrape sides as necessary. Transfer to serving bowl.
  3. Thread meat on skewers, leaving 1/4 inch between pieces. For charcoal grill, place steaks on rack directly over medium coals. Cover and grill 10 to 12 minutes for medium rare (145 degrees F), turning to brown evenly. (For gas grill, preheat grill. Grill as directed above.)

Cheddar Macaroni Beef Casserole

  • 1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
  • 1 lb. lean ground beef
  • 1 can (14-1/2 oz.) Italian-style stewed tomatoes, undrained
  • 1/2 tsp. dried oregano leaves or dried basil leaves
  • 1/2 cup KRAFT Shredded Cheddar Cheese
  1. Preheat oven to 400ºF. Prepare Dinner as directed on package, omitting butter. Meanwhile, brown meat in large nonstick skillet on medium-high heat; drain. Add tomatoes and oregano; mix well. Bring to boil.
  2. Add meat mixture to Dinner; spoon into 9-inch square baking dish. Sprinkle with cheese.
  3. Bake 10 min. or until cheese is melted and casserole is heated through.

**Personal Review: I added a large chopped onion, 1 garlic clove, chopped, a little bit of soy sauce and a little bit of hot sauce to give it a kick.  This was super easy to make and it turned out fantastic!  I also switched the oven onto the broiler for a few minutes to let the cheese really turn golden brown.**
