Zesty Home Fries

Makes: 8 servings, 3/4 cup each

  • 2 lb. red new potatoes (about 5 potatoes), cut into large chunks
  • 1/2 cup KRAFT Light Zesty Italian Dressing
  • 1/2 tsp. black pepper
  • 1 large red onion, cut into chunks
  • 1/4 cup chopped fresh parsley
  • 2 slices OSCAR MAYER Bacon, crisply cooked, crumbled
  • 1 cup KRAFT 2% Milk Shredded Reduced Fat Sharp Cheddar Cheese
  1. Preheat oven to 450°F. Toss potatoes with dressing and pepper in greased 15x10x1-inch baking pan. Spread into single layer.
  2. Bake 20 min. Stir in onions. Continue baking 20 min. or until vegetables are tender.
  3. Sprinkle with parsley and bacon; stir. Top with cheese. Bake an additional 2 min. or until cheese is melted.

Potato Smashers

Makes: 4 servings, two topped potatoes each

8 small new potatoes (3/4 lb.), about 1-1/2 inches in diameter
1/2 cup water
4 slices OSCAR MAYER Center Cut Bacon
2 Tbsp. KRAFT Zesty Italian Dressing
1/2 cup KRAFT Shredded Sharp Cheddar Cheese

Place potatoes and water in 2-qt. microwaveable dish. Microwave, uncovered, on HIGH 10 min. or until potatoes are tender. Let stand 5 min. Meanwhile, cook bacon in large nonstick skillet on medium heat 8 to 10 min. or until crisp, turning frequently. Drain on paper towels.

Drain potatoes; place on work surface. Press each potato with bottom of small bowl or saucer to flatten to 1/2-inch thickness.

Heat dressing in skillet on medium heat. Add potatoes; cook 4 min. or until bottoms are golden brown. Meanwhile, crumble bacon. Turn potatoes over; sprinkle evenly with cheese and bacon. Cover skillet with lid. Cook an additional 2 min. or until cheese is melted.

Perfect Winter Beef Stew

Makes: 8 servings, 1-1/4 cups each

  • 3/4 cup KRAFT Zesty Italian Dressing
  • 2 lb. beef for stew, such as chuck roast, cut into 1-inch chunks
  • 6 slices OSCAR MAYER Bacon, chopped
  • 3 cups sliced fresh mushrooms
  • 1 large onion, chopped
  • 6 carrots, sliced
  • 1-1/2 lb. potatoes, peeled, cut into large chunks
  • 1 can (14-1/2 oz.) stewed tomatoes, undrained
  • 1 can (14-1/2 oz.) beef broth
  1. Pour dressing over beef in shallow glass dish. Refrigerate 30 min. to marinate. Meanwhile, cook bacon in large saucepan on medium heat 5 min. or until crisp, stirring occasionally. Remove bacon from saucepan; discard drippings. Drain bacon on paper towels.
  2. Add mushrooms and onions to saucepan; cook on medium-high heat 10 min., stirring occasionally. Remove beef from marinade; discard marinade. Add beef, carrots, potatoes, tomatoes, broth and bacon to saucepan; stir.
  3. Bring to boil, stirring occasionally; cover. Simmer on low heat 1 hour 30 min. or until meat is done and sauce is thickened, stirring occasionally and removing the lid for the last 15 min..

How to Prepare Stew in Slow Cooker

  1. Marinate beef and cook bacon, onions and mushrooms as directed. Remove beef from marinade; discard marinade. Add beef, onions, mushrooms and remaining ingredients to slow cooker.
  2. Cook 10 to 12 hours on LOW (or 5 to 6 hours on HIGH). Stir in 2 Tbsp. flour mixed with 2 Tbsp. water. Cook 15 min. or until sauce is thickened.

**Personal Review: This had very little flavor – I would highly reccomend marinating the beef for more than 30 minutes to give the beef a bit more flavor.  We also ended up adding Franks Red Hot Sauce, garlic powder and salt & pepper to give it a bit more flavor.  I did this in the slow cooker as well on low heat.  We threw the leftovers into the fridge for the next day and it tasted great.  This was much better as a leftover than first taste.**

Zesty Chicken and Pasta

  • 1 pkg. (8 oz.) fusilli pasta
  • 1/2 cup KRAFT Light House Italian Dressing, divided
  • 1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 cups broccoli florets
  • 1 large red pepper, chopped
  • 1 small onion, thinly sliced
  • 1 Tbsp. chopped fresh parsley
  • 1/4 cup KRAFT Grated Parmesan Cheese
  1. Cook pasta as directed on package.
  2. Meanwhile, heat 1/4 cup of the dressing in large skillet on medium-high heat. Add chicken; cook 5 min. or until cooked through, stirring occasionally. Add vegetables and parsley; cook 5 min. or until vegetables are tender, stirring occasionally.
  3. Drain pasta; mix with chicken mixture and remaining 1/4 cup dressing. Sprinkle with cheese.

Substitute
Substitute cleaned uncooked shrimp for the chicken, reducing the cooking time to 2 min. or until shrimp turn pink before adding the vegetables and parsley.

 **Personal Review:  I threw this together and it was AWESOME. Very simple to make and you can throw any kind of pasta you like in.  I plan on making this one again!**

Creamy Pasta Primavera

  • 3 cups penne pasta, uncooked
  • 2 Tbsp. KRAFT Light Zesty Italian Reduced Fat Dressing
  • 1-1/2 lb. boneless skinless chicken breasts, cut into 1-inch chunks
  • 2 zucchini, cut into chunks
  • 1-1/2 cups cut-up fresh asparagus (1-inch lengths)
  • 1 red pepper, chopped
  • 1 cup fat-free reduced-sodium chicken broth
  • 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
  • 1/4 cup KRAFT Grated Parmesan Cheese
  1. Cook pasta as directed on package.
  2. Meanwhile, heat dressing in large skillet on medium heat. Add chicken and vegetables; cook 10 to 12 min. or until chicken is cooked through, stirring frequently. Add broth and Neufchatel cheese; cook 1 min. or until cheese is melted, stirring constantly. Add Parmesan cheese; mix well.
  3. Drain pasta; return to pot. Add chicken and vegetable mixture; toss lightly. Cook 1 min. or until heated through. (Sauce will thicken upon standing.)

**Personal Review: This was pretty easy to make but I think maybe they are requesting too much chicken broth, my sauce never thickened up throughout because there was a cup of liquid on the bottom.  It tasted great though!**

Crunchy Asian Broccoli Coleslaw

  • 1/2 cup KRAFT Zesty Italian Dressing
  • 2 pkg. (3 oz. each) ramen noodle soup mix
  • 2 pkg. (12 oz. each) broccoli slaw
  • 4 green onions, sliced
  • 1/2 cup PLANTERS Dry Roasted Sunflower Kernels
  • 1/2 cup PLANTERS Sliced Almonds, toasted
  1. Mix dressing with Seasoning Packet from one of the soup mix packages. Discard remaining seasoning packet or reserve for another use.
  2. Break apart Noodles; place in large bowl. Add slaw, onions, sunflower kernels and almonds; mix lightly.
  3. Add dressing mixture; toss to coat. Serve immediately.

Make Ahead
Dressing mixture can be prepared ahead of time. Cover and refrigerate up to 24 hours. Noodles can also be crumbled the day before; place in resealable plastic bag along with the sunflower kernels and almonds. Seal bag and store at room temperature until ready to use to assemble salad.

**Personal Review: I made this to take to a 4th of July party.  It was very simple to make and very quick!  I wish I would have added more dressing because it was somewhat dry when we finally got around to eating it.  But it was great otherwise, great taste!**
