Pan Roasted Steak Dinner

  • 1 lb. well-trimmed boneless beef sirloin steak, 1 inch thick
  • 1/2 cup KRAFT Light CATALINA Dressing, divided
  • 1/2 tsp. pepper
  • 1 onion, chopped
  • 3 cups small broccoli florets
  • 1-1/2 cups very thinly sliced carrots (4 large carrots)
  • 1-1/2 cups instant brown rice, uncooked
  1. Place steak in resealable plastic bag. Pour 1/4 cup of the dressing over steak; refrigerate at least 30 min. to marinate.
  2. Preheat oven to 400°F. Spray large nonstick skillet with cooking spray; heat on medium-high heat until hot. Remove steak from bag; discard bag and marinade. Place steak in hot skillet; sprinkle with pepper. Place onions around steak. Cook 3 min. or until bottom of steak is well browned. Turn steak over; turn off heat. Combine broccoli, carrots and remaining 1/4 cup dressing; mix with onions. Wrap handle of skillet in heavy-duty foil. Place skillet in oven.
  3. Bake 18 to 20 min. or until steak is cooked to medium doneness (160°F). Meanwhile, prepare rice as directed on package. Cut steak across the grain into thin slices; transfer to serving plates. Spoon vegetable mixture over steak; serve with rice.

**Personal Review: YUM! Jason couldn’t stop raving about this and I inhaled it before I realized I was finished. I will make this one again.**

Zesty Home Fries

  • 2 lb. red new potatoes (about 5 potatoes), cut into large chunks
  • 1/2 cup KRAFT Light Zesty Italian Dressing
  • 1/2 tsp. black pepper
  • 1 large red onion, cut into chunks
  • 1/4 cup chopped fresh parsley
  • 2 slices OSCAR MAYER Bacon, crisply cooked, crumbled

  1. Preheat oven to 450°F. Toss potatoes with dressing and pepper in greased 15x10x1-inch baking pan. Spread into single layer.

Easy Creamy Baked Asparagus

1 lb. fresh asparagus spears, trimmed
1/4 cup KRAFT Peppercorn Ranch Dressing
2 Tbsp. KRAFT Shredded Parmesan Cheese
1/2 cup coarsely crushed RITZ Cheese Crackers (about 12 crackers)

Preheat oven to 350°F. Cook asparagus in simmering water in large skillet 2 to 3 min. or until bright green, but still crisp; drain.

Toss asparagus with dressing in 1-1/2- to 2-qt. baking dish. Sprinkle with cheese and cracker crumbs.

Bake 10 to 15 min. or cheese is lightly browned and mixture is heated through.

Honey Spice-Rubbed Pork Tenderloin

  • 1 pork tenderloin (1 lb.)
  • 1/4 cup KRAFT CATALINA Dressing, divided
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. dry mustard
  • 1/2 tsp. paprika
  • 1/4 tsp. dried thyme leaves
  • 1 Tbsp. honey
  1. Preheat oven to 425ºF. Brush meat with 2 Tbsp. of the dressing. Mix dry ingredients; rub onto meat. Place in baking pan. Mix remaining 2 Tbsp. dressing and honey; set aside.
  2. Bake 15 min.; brush with dressing mixture. Bake an additional 10 min. or until cooked through (160ºF).
  3. Remove meat from oven; cover with foil. Let stand 5 min. before slicing.

How to Prepare on the Grill:
Preheat grill to medium heat. Prepare meat as directed, rubbing with spice mixture. Place meat on grill; cover grill with lid. Grill 20 min., or turning occasionally. Brush with some of the honey mixture. Continue grilling 5 to 10 min. or until meat is cooked through (160ºF), turning and brushing frequently with honey mixture. Let stand covered with foil, 5 min. before slicing.

Potato Smashers

8 small new potatoes (3/4 lb.), about 1-1/2 inches in diameter
1/2 cup water
4 slices OSCAR MAYER Center Cut Bacon
2 Tbsp. KRAFT Zesty Italian Dressing
1/2 cup KRAFT Shredded Sharp Cheddar Cheese

Place potatoes and water in 2-qt. microwaveable dish. Microwave, uncovered, on HIGH 10 min. or until potatoes are tender. Let stand 5 min. Meanwhile, cook bacon in large nonstick skillet on medium heat 8 to 10 min. or until crisp, turning frequently. Drain on paper towels.

Drain potatoes; place on work surface. Press each potato with bottom of small bowl or saucer to flatten to 1/2-inch thickness.

Heat dressing in skillet on medium heat. Add potatoes; cook 4 min. or until bottoms are golden brown. Meanwhile, crumble bacon. Turn potatoes over; sprinkle evenly with cheese and bacon. Cover skillet with lid. Cook an additional 2 min. or until cheese is melted.

Perfect Winter Beef Stew

  • 3/4 cup KRAFT Zesty Italian Dressing
  • 2 lb. beef for stew, such as chuck roast, cut into 1-inch chunks
  • 6 slices OSCAR MAYER Bacon, chopped
  • 3 cups sliced fresh mushrooms
  • 1 large onion, chopped
  • 6 carrots, sliced
  • 1-1/2 lb. potatoes, peeled, cut into large chunks
  • 1 can (14-1/2 oz.) stewed tomatoes, undrained
  • 1 can (14-1/2 oz.) beef broth
  1. Pour dressing over beef in shallow glass dish. Refrigerate 30 min. to marinate. Meanwhile, cook bacon in large saucepan on medium heat 5 min. or until crisp, stirring occasionally. Remove bacon from saucepan; discard drippings. Drain bacon on paper towels.
  2. Add mushrooms and onions to saucepan; cook on medium-high heat 10 min., stirring occasionally. Remove beef from marinade; discard marinade. Add beef, carrots, potatoes, tomatoes, broth and bacon to saucepan; stir.
  3. Bring to boil, stirring occasionally; cover. Simmer on low heat 1 hour 30 min. or until meat is done and sauce is thickened, stirring occasionally and removing the lid for the last 15 min..

How to Prepare Stew in Slow Cooker

  1. Marinate beef and cook bacon, onions and mushrooms as directed. Remove beef from marinade; discard marinade. Add beef, onions, mushrooms and remaining ingredients to slow cooker.
  2. Cook 10 to 12 hours on LOW (or 5 to 6 hours on HIGH). Stir in 2 Tbsp. flour mixed with 2 Tbsp. water. Cook 15 min. or until sauce is thickened.

**Personal Review: This had very little flavor – I would highly reccomend marinating the beef for more than 30 minutes to give the beef a bit more flavor.  We also ended up adding Franks Red Hot Sauce, garlic powder and salt & pepper to give it a bit more flavor.  I did this in the slow cooker as well on low heat.  We threw the leftovers into the fridge for the next day and it tasted great.  This was much better as a leftover than first taste.**

Roasted Red Potatoes with Bacon & Cheese

  • 1/2 cup KRAFT Finely Shredded Italian* Five Cheese Blend

  • 1 Tbsp. chopped fresh parsley
  1. Preheat oven to 350°F. Mix dressing, cheese and bacon bits in large bowl. Add potatoes; toss lightly.
  2. Spoon into lightly greased 13×9-inch baking dish; cover with foil.
  3. Bake 40 min. Remove foil; bake an additional 15 min. or until potatoes are tender. Sprinkle with parsley.

**Personal Review: AWESOME AWESOME AWESOME – super easy and REALLY good!  This will be a staple in our household!**

Saucy Chicken Italiano

  • 4 small boneless skinless chicken breast halves (1 lb.)
  • 1 onion, thinly sliced, separated into rings
  • 1 red pepper, cut into thin strips
  • 1 cup fat-free reduced-sodium chicken broth
  • 1/2 cup KRAFT Classic Caesar Dressing
  • 1 cup KRAFT Finely Shredded Italian* Five Cheese Blend
  1. Heat large nonstick skillet sprayed with cooking spray on medium-high heat. Add chicken; cook 5 min. on each side or until cooked through (165ºF).
  2. Add vegetables, broth and dressing; cover. Cook on medium heat 6 to 8 min. or until vegetables are crisp-tender.
  3. Spoon vegetables onto platter; top with chicken, sauce and cheese.

Serving Suggestion: Serve over hot cooked pasta, such as linguine or fettuccine.

**Personal Review: YUM!!!  This was really simple to make and tasted great.  I think I might marinate the chicken in the dressing before hand next time to give it a little bit more flavor.  I loved this – I went back for seconds and Jason was excited to take the rest into work for leftovers.**

  • 1/2 cup KRAFT Light House Italian Dressing, divided
  • 1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 cups broccoli florets
  • 1 large red pepper, chopped
  • 1 small onion, thinly sliced
  • 1 Tbsp. chopped fresh parsley
  • 1/4 cup KRAFT Grated Parmesan Cheese
  1. Cook pasta as directed on package.
  2. Meanwhile, heat 1/4 cup of the dressing in large skillet on medium-high heat. Add chicken; cook 5 min. or until cooked through, stirring occasionally. Add vegetables and parsley; cook 5 min. or until vegetables are tender, stirring occasionally.
  3. Drain pasta; mix with chicken mixture and remaining 1/4 cup dressing. Sprinkle with cheese.
    Kraft Kitchens Tips

Substitute
Substitute cleaned uncooked shrimp for the chicken, reducing the cooking time to 2 min. or until shrimp turn pink before adding the vegetables and parsley.

 **Personal Review:  I threw this together and it was AWESOME. Very simple to make and you can throw any kind of pasta you like in.  I plan on making this one again!**
