COOL ‘N EASY Strawberry Pie

Makes: 8 servings, one piece each

  • 2/3 cup boiling water
  • 1 pkg. (4-serving size) JELL-O Strawberry Flavor Gelatin
  • Ice cubes
  • 1/2 cup cold water
  • 1 tub (8 oz.) COOL WHIP LITE Whipped Topping, thawed
  • 1 cup chopped fresh strawberries
  • 1 ready-to-use reduced-fat graham cracker crumb crust (6 oz.)
  • 1 cup sliced strawberries
  1. Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
  2. Add whipped topping; stir with wire whisk until well blended. Stir in chopped strawberries. Refrigerate 20 to 30 min. or until mixture is very thick and will mound. Spoon into crust.
  3. Refrigerate 6 hours or overnight until firm. Top with sliced strawberries. Store leftovers in refrigerator.

Strawberry Cheesecake Smoothie

MAKES 1 DRINK

  • 1/4 cup boiling water
  • 2 tablespoons sugar
  • 1 teaspoon grated lemon peel
  • 3 ounces cream cheese
  • 1/2 teaspoon pure vanilla extract
  • 2 cups frozen strawberries
  1. Using a blender, mix the boiling water, sugar and lemon peel until the sugar is dissolved, about 15 seconds. Add the cream cheese and vanilla and blend until smooth. Add the frozen strawberries and blend on high speed until slushy, about 30 seconds.
    **Tip: Garnish with crushed graham crackers**

Grilled Summer Cobbler

  • 1 cup plus 1 tablespoon flour
  • 1/4 cup plus 2 tablespoons sugar, plus more for sprinkling
  • 2 teaspoons baking powder
  • 1/2 cup buttermilk, at room temperature
  • 4 tablespoons unsalted butter, melted
  • 1 1/2 pounds nectarines (3 to 4), sliced
  • 1 cup mixed berries
  • Vanilla ice cream, for serving
  1. Preheat a grill to medium-high. Grease a medium cast-iron skillet. In a medium bowl, whisk together 1 cup flour, 1/4 cup sugar and the baking powder. Mix in the buttermilk and butter until just combined.
  2. In another medium bowl, toss together the nectarines, berries, remaining 1 tablespoon flour and 2 tablespoons sugar.
  3. Spoon the fruit into the prepared skillet and dollop the dough over the fruit in 8 spoonfuls; sprinkle with sugar. Cover with foil and grill until the juices are bubbling and the top is golden, about 20 minutes. Let cool for 5 minutes before serving with a scoop of the ice cream.

Grilled Strawberry Bread

  • 1 1/2 pounds strawberries, trimmed
  • Juice of 1 lemon
  • 1 tablespoon balsamic vinegar
  • 3/4 cup sweetened condensed milk
  • 1 baguette, split and sliced crosswise into thirds
  1. Preheat a grill or grill pan to medium. In a large saucepan, mash together the strawberries, lemon juice and vinegar and cook over high heat until softened, 2 to 4 minutes.
  2. Spread 2 tablespoons condensed milk on the cut sides of each baguette slice; let soak in 1 to 2 minutes. Grill the bread crust side down until warm, about 2 minutes; turn and grill until golden, 3 to 5 minutes.
  3. Top the grilled bread with the strawberries and let stand for a few minutes before serving.
