Makes: 6 servings

Cook: 10 minutes
- 4 strips bacon
- 1 large sweet onion, thinly sliced
- 6 oz. dry elbow macaroni
- 8 oz. mozzarella cheese, shredded (2 cups)
- 2 to 4 oz. blue cheese, crumbled (cream cheese can be substituted)
- 1 cup half-and-half or light cream
- 1/8 tsp. pepper
- Preheat oven to 350 degrees F. In a large skillet cook bacon over medium heat until crisp, turning once. Drain bacon on paper towels; crumble. Reserve bacon drippings in skillet.
- Cook onion in reserved bacon drippings for 5 to 8 minutes or until onion is tender and golden brown. Set aside.
- Cook elbow macaroni according to package directions. Drain and place in a 1-1/2-quart casserole. Add the crumbled bacon, onions, 1-1/2 cups of the mozzarella cheese, the blue cheese, half-and half, and pepper. Toss gently to combine.
- Bake, uncovered, for 20 minutes. Stir gently. Top with the remaining mozzarella cheese. Bake for 10 minutes more or until top of casserole is brown and bubbly. Let stand 10 minutes.

- 2 tablespoons extra-virgin olive oil (EVOO)
- 4 slices bacon, chopped
- 1 onion, chopped
- 1/2 red bell pepper, seeded and chopped
- 1 pound small potatoes, cut into small chunks
- 4 to 5 large ears corn, kernels scraped from the cobs, or one 10-ounce box frozen corn
- 1 medium or 2 small zucchini, finely chopped
- 5 to 6 sprigs thyme
- 1 bay leaf
- 1 teaspoon paprika
- 3 tablespoons flour
- One 32-ounce container (4 cups) chicken broth
- 1 cup milk
- 1 cup heavy cream
- 1/2 cup chopped flat-leaf parsley
- Salt and pepper
- Hot pepper sauce
- Oyster crackers or popcorn, to pass around the table
- In a medium soup pot, heat the EVOO, 2 turns of the pan, over medium-high heat. Add the bacon and cook until crisp at the edges. Add the onion and bell pepper and cook until softened, about 4 minutes. Add the potatoes, corn, zucchini, thyme, bay leaf and paprika and cook for 4 minutes. Sprinkle the flour into the pot, stir and cook for 1 minute. Gradually stir in the broth and simmer until thickened a bit. Stir in the milk, cream and parsley and simmer until the potatoes are tender, about 8 minutes.
- Season the corn choup to taste with salt, pepper and hot pepper sauce and serve with crackers or popcorn to float on top.

Cook: Low 5 to 6 hours (low)
- Nonstick cooking spray
- 1 10-3/4-ounce can condensed cream of chicken with herbs soup
- 1 8-ounce carton dairy sour cream
- 6 ounces smoked cheddar cheese, shredded (1-1/2 cups)
- 1 28-ounce package frozen loose-pack diced hash brown potatoes with onion and peppers, thawed
- 3 cups chopped smoked or roasted chicken or turkey
- Crushed croutons (optional)
- Lightly coat the inside of a 3-1/2- or 4-quart slow cooker with nonstick cooking spray. In the cooker combine soup, sour cream, cheese, frozen potatoes, and chicken.
- Cover and cook on low-heat setting for 5 to 6 hours. If desired, top each serving with crushed croutons. Makes 6 servings.

- 3/4 cup crushed NILLA Wafers (about 24 wafers)
- 1/4 cup firmly packed brown sugar
- 1/4 cup (1/2 stick) butter, melted
- 1 ready-to-use refrigerated pie crust (1/2 of 15-oz. pkg.)
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
- 2 large baking apples, peeled, sliced
- 1 large fresh pear, peeled, sliced
- 1/3 cup granulated sugar
- 1/4 cup flour
- 1/2 tsp. ground cinnamon
- 1-1/4 cups thawed COOL WHIP Whipped Topping
- Preheat oven to 375ºF. Mix wafer crumbs, brown sugar and butter until well blended; set aside.
- Place pie crust in greased 9-inch pie plate. Spread cream cheese carefully onto bottom of crust; sprinkle with half of the crumb mixture. Set aside. Combine fruit in large bowl. Add granulated sugar, flour and cinnamon; toss to coat. Spoon over crumb layer in pie crust; sprinkle with remaining crumb mixture.
- Bake 35 min. or until fruit is tender and crust is lightly browned, covering loosely with foil after 25 min. if necessary to prevent crust from overbrowning. Cool on wire rack. Serve topped with the whipped topping. Store any leftover pie in refrigerator.

Serves 4
- 2 pounds small red-skinned or yukon gold potatoes
- Salt
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- A few sprigs thyme
- One 3-inch piece lemon peel
- Pepper
- Four 6-ounce salmon fillets, skinned
- 4 slices black-pepper bacon
- 1 head broccoli, cut into spears
- One 1-inch piece fresh ginger, peeled and grated
- 2 cloves garlic, peeled and grated
- 3 tablespoons extra-virgin olive oil (EVOO)
- 2 pinches crushed red pepper
- 1/4 cup pure maple syrup
- 2 tablespoons tamari (dark soy sauce)
- Position a rack in the upper third of the oven and preheat to 450°. In a large saucepan, add the potatoes and enough water to cover. Bring to a boil, salt the water and cook until tender, 12 to 15 minutes. Drain; return to the pot.
- While the potatoes are working, in a saucepan, combine the chicken broth, cream, thyme sprigs and lemon peel and steep over medium-low heat. Pour over the drained potatoes and mash together; season with salt and pepper. Cover to keep warm.
- Season the salmon with salt and pepper, then wrap each fillet with the bacon. Arrange the fish on a broiler pan and roast until the bacon is almost crisp and the fish is almost firm, about 12 minutes.
- On a rimmed baking sheet, toss together the broccoli, ginger, garlic, EVOO and crushed red pepper; season with salt. Roast in the lower third of the oven until tender, about 12 minutes.
- In a small saucepan, bring the maple syrup and tamari to a boil. Baste the salmon liberally with the glaze and cook for 1 minute more. Serve with the mashed potatoes and broccoli.

- 2 tablespoons vegetable oil
- 2 1/4 pounds skinless, boneless chicken breasts
- Two 16-ounce jars salsa verde
- One 15-ounce can kidney beans, rinsed and drained
- 1 onion, finely chopped
- 1 cup sour cream
- 3 cups crushed tortilla chips
- One 8-ounce bag shredded Mexican-style cheese
- Preheat the oven to 375°. In a large skillet, heat the oil over medium heat. Add the chicken and cook, turning once, until cooked through, 10 to 12 minutes. Let stand until cool, then shred the meat into a large bowl. Stir in the salsa, kidney beans, onion and sour cream.
- Grease a 9-by-13-inch baking dish, scatter 1 cup tortilla chips on the bottom and top with half of the chicken mixture and half of the cheese. Repeat the layers and cover with the remaining 1 cup tortilla chips. Bake until the cheese is bubbly, about 30 minutes.

Makes 6 servings
- 1 package (8 oz) cream cheese, softened
- 1 can (11 oz) whole kernel corn, drained
- 1/2 cup chopped fresh cilantro or parsley
- 1/3 cup sliced green onions (5 medium)
- 1 jar (2 oz) diced pimientos, drained
- 1/2 teaspoon pepper
- 1/4 teaspoon ground red pepper (cayenne)
- 1 lb chopped cooked crabmeat or imitation crabmeat (2 cups)
- 6 sun-dried tomato or spinach-cilantro flavored flour tortillas (8 to 10 inch)
- 1 tablespoon butter or margarine, melted
- Sour cream and chopped fresh cilantro, if desired
- In medium bowl, mix cream cheese, corn, cilantro, onions, pimientos, pepper and red pepper. Fold in crabmeat. Spread 2/3 cup of the crabmeat mixture over each tortilla; fold tortilla in half, pressing lightly. Brush both sides of each tortilla with butter.
- In 12-inch skillet, cook 3 tortillas at a time over medium-high heat about 5 minutes, turning once, until light brown. Garnish with sour cream and cilantro.

- 1 tablespoon Pure Wesson Canola Oil
- 1 cup frozen whole kernel corn
- 1 cup chopped red onion
- 1/2 cup chopped celery
- 2 teaspoons minced jalapeno pepper
- 1 tablespoon minced garlic
- 3-1/2 cups reduced-sodium chicken broth
- 1 can (14.5 oz each) Hunt’s Fire Roasted Diced Tomatoes, drained
- 1-1/2 cups shredded cooked chicken breast
- 1/2 cup diced queso fresco cheese
- 3/4 cup sour cream
- 2 ounces white tortilla chips, coarsely broken (2 oz = 15 chips)
- 3 tablespoons chopped fresh cilantro
- Heat medium saucepan over medium-high heat; add oil, corn, onion, celery and jalapeno. Cook and stir 3 to 5 minutes or until vegetables are tender. Add garlic; cook 1 minute or until aromatic.
- Add broth, drained tomatoes and chicken. Cook, uncovered, over medium heat 10 to 12 minutes or until hot and flavors have blended.
- Divide cheese equally between each soup bowl. Add 1 cup soup to each. Top with equal amounts of sour cream, tortilla chips and cilantro.

- 4 small boneless skinless chicken breast halves (1 lb.)
- 1/2 cup TACO BELL® HOME ORIGINALS® Thick ‘N Chunky Salsa
- 1/4 cup BREAKSTONE’S or KNUDSEN Sour Cream
- 1/2 cup crushed tortilla chips
- 1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese
- Preheat oven to 400ºF. Place chicken on foil-covered baking sheet. Slice three cuts on top of each chicken breast with sharp knife.
- Top each chicken breast evenly with salsa, sour cream and tortilla chips.
- Bake 20 min. Remove from oven; sprinkle with cheese. Bake an additional 10 min. or until chicken is cooked through (165ºF).

- 1 lb. large cauliflower florets
- 1 lb. large broccoli florets
- 1/2 cup water
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
- 1/4 cup milk
- 1/2 cup BREAKSTONE’S or KNUDSEN Sour Cream
- 1-1/2 cups KRAFT Shredded Sharp Cheddar Cheese
- 10 RITZ Crackers, crushed
- 3 Tbsp. KRAFT Grated Parmesan Cheese
- Combine vegetables in 2-qt. microwaveable casserole. Add water; cover with lid. Microwave on HIGH 8 to 10 min. or until vegetables are tender; drain. Set aside.
- Microwave cream cheese and milk in 2-cup microwaveable measuring cup or medium bowl 1 min. or until cream cheese is melted and mixture is well blended when stirred. Stir in sour cream; pour over vegetables. Sprinkle with Cheddar; microwave 2 min. or until melted.
- Mix cracker crumbs and Parmesan; sprinkle over vegetables.
